Pumpkin Bread
{Just slightly modified from my girl, Paula Deen 's The Lady & Sons Savannah Country Cookbook
3 and 1/3 c. flour
2 tsp. baking soda
1 and 1/2 tsp. coarse salt
1 tsp. ground cinnamon
1 tsp. freshly ground nutmeg
3 c. sugar
1 c. vegetable oil
4 eggs
1 (15 oz) can pumpkin
2/3 c. water
1/4 c. pumpkin seed kernels
Preheat oven to 350. Grease and flour 2 loaf pans.
Combine flour, baking soda, salt, cinnamon and nutmeg. Set aside.
Beat the sugar and oil together until combined. Beat in the eggs and mix, scraping down sides of bowl as needed. Add pumpkin and blend. Add the water and blend completely.
Slowly add the flour mixture and beat on low until combined. Pour into loaf pans.
Bake for 1 hour, or more, until a toothpick inserted in the middle comes out clean. Cool in the pans on a cooling rack for 15 minutes. Remove from pans and let cool completely.

It's so funny that you just posted about pumpkins! I made pumpkin chocolate chip cookies on Wednesday, even though it's not "technically" the season AND I was just thinking to myself, "I wonder what the actual nutmeg spice looks like whole". Seriously, you are reading my mind!

ReplyDeleteDid you know this year there was a national pumpkin shortage? Apparently the crop last year wasn't the best and they ran out. We looked all over and Libbey had nada. They planted early this year and a bit further south so that they could meet demand.

ReplyDeleteI am glad that i am not the only one that hasn't been able to find pumpkin this year. I love to make pumpkin pie in the summer. It is so yummy and cool out of the fridge. But I haven't been able to find any since last Fall. I told my mom that I will be hoarding it as soon as I see it on the shelves.
Hooray for pumpkin. You know...the pumpkin spice lattes came back yesterday. Go get one!

ReplyDeleteYeah! I am so excited for pumpkin season...I went to Kroger two weeks ago and they told me they had NO pumpkin filling yet. Needless to say I was frustrated, but hopefully September 1st will deliver!

ReplyDeleteI love pumpkins! We actually planted two pumpkin plants this year and thankfully they each are producing a couple of pumpkins! I should have planted more though because I still can't find canned pumpkin in any stores around here! Where are you finding yours?

It was torturous 2 years ago when I was pregnant with my son, and had to follow the diet for gestational diabetes; I wanted those muffins even more!! Lol they were the first thing I wanted after I delivered him!

ReplyDeleteI'm scared pf pumpkins. Very scared.. while I see recipes on blogs etc, I worried about not liking it and really don't want the food to end up in the waste bin. I think the feeling has got to do with the fact that pumpkins are extensively used in Indian spicy food.

I make pumpkin cupcakes, pumpkin bread, pumpkin pancakes with pumpkin butter, pumpkin roll, pumpkin cookies, pumpkin cheesecake... oh yeah, I am right there with you with your obsession!! I have been getting a grande caramel pumpkin spice frappuccino from Starbucks... 3 to 5 times a week... and their pumpkin muffins with the cream cheese... TO DIE FOR!! If you haven't tried Caramel Pumpkin Spice Frappuccino, you gotta try it!! It is amazing!! :) Happy Baking!!
