Spiced Pumpkin Energy Balls

I have been making batch after batch after batch of date and sunflower seed energy balls lately. Then, last week, I decided to add a little pumpkin and pumpkin pie spices to the mix. Hello, snack I want to eat 24/7!

Have you jumped on the energy ball bandwagon? It took me a while, and now I'm absolutely hooked! You might also see them called energy bites or nut or seed truffles. While the ingredients differ from recipe to recipe, they typically contain nutritious ingredients perfect when you're feeling peckish.

When I want a treat during the day...and have reached my cookie quota...these really hit the spot! They're nut-free, dairy-free, and gluten-free if you're watching those things. More importantly, they taste great! Chewy with a little crunch, moist and full of warm fall spices.

These are super simple to make...you just need a food processor. And, um, the ingredients. 


date syrup, low-glycemic index sweetener for date balls

The main sweetness of these little bites comes from dates. I also add a bit of date syrup (I love it!), but you can substitute maple syrup. 



First, you'll whir up some sunflower seeds and spices.



Next, add in the chopped dates. I am crazy about Rancho Meladuco's dates! So good! The dates add natural sweetness and moisture. 



You'll then add the pumpkin, oats, olive oil, date syrup, and chia seeds. It just takes a few pulses to bring it all together.

At this point, the mixture can be rolled into balls. If not quite sticky enough, add a bit more date syrup.

I use a small cookie scoop to portion, then roll the balls with my hands.

Store in the fridge, and feel free to snack away! 


Spiced Pumpkin Energy Balls

(makes 24)


1 cup raw sunflower seeds

1/2 tablespoon cinnamon

1 teaspoon ginger

1/4 teaspoon allspice

1/4 teaspoon cloves

1/4 teaspoon freshly grated nutmeg

pinch fine sea salt

1/2 cup chopped Medjool dates

1/4 cup pumpkin puree

1/4 cup old-fashioned oats

1 tablespoon extra-virgin olive oil

1 tablespoon date syrup (or maple syrup)

1/2 tablespoon chia seeds


In a food processor, whir the sunflower seeds, cinnamon, ginger, allspice, cloves, nutmeg, and salt together until the seeds are fine in texture. Add in the dates and run on low speed until chopped and well-distributed. The mixture will begin to look moist. 


Add in the pumpkin, oats, olive oil, date syrup, and chia seeds. Pulse until combined.


Use a small scoop to portion the dough and roll into about 1-inch balls. Store in the refrigerator.
