You might have all of the ingredients already - butter, flour, chocolate, eggs, vanilla...all the good stuff. You'll also need mini chocolate eggs.

I used Cadbury Mini Eggs, but feel free to use Hershey's, Lindt, or whatever little chocolate eggs you love. (Lindt eggs were recommended by How Sweet Eats, but I haven't been able to find them!)

The cookie base is rich and chocolatey, but we're going to bump up the chocolate goodness by adding chocolate chips. Hello, my love.

The last step is scooping the dough and pressing exactly three mini chocolate eggs into the top of each cookie. Add four, and they start to slide off the sides; two isn't enough - three. I use a 2-tablespoon cookie scoop for perfectly portioned cookies. When the cookies are all the same size, they bake in the same amount of time.

Chocolate Mini Egg Cookies

12 ounces bittersweet (or semisweet) chocolate, chopped

1/2 cup salted butter

3 eggs

1/2 cup sugar

2 teaspoons vanilla

1/8 teaspoon kosher salt

1 1/2 cup unbleached, all-purpose flour

1/2 teaspoon baking soda

2 cups semisweet chocolate chips

1 package mini chocolate eggs, such as Cadbury or Hershey's


Preheat oven to 350. Line cookie sheets with parchment. 


Over low heat, melt chopped chocolate and butter together until melted. Set aside. Beat eggs, sugar, vanilla, and salt together until well combined. Mix in melted chocolate. On low speed, mix in flour and baking soda just until combined. Stir in the chocolate chips.


Chill for 15 minutes. Use a 2-tablespoon cookie scoop to portion the dough onto cookie sheets. Press three chocolate eggs onto each cookie. Bake 10 minutes. Cookies may look slightly underdone in the centers but will firm up as they cool. Let cool on cookie sheets for 3-4 minutes, then remove to a cooling rack to cool completely.
