I got Boo'd, y'all!
Does your neighborhood play this game? It's kind of like Secret Santa. Someone leaves a Halloween happy on your porch, you leave one for someone else, and so on.
Well, I was so excited to get Boo'd for the very first time!!! Someone likes me! ;) Yay!
Now, what to do for my BOO? Immediately, I thought of these Chocolate Candy Corn Cookies from Everyday Food (October 2004).
They are really simple and if you have candy corns, you probably have all the other ingredients on hand, too. If you need a quick Halloween treat, these are perfect.
The cookies are addicting! I'm not a huge fan of candy corn (unless mixed with peanuts), but in these cookies, they just add a perfect amount of chewiness. I promise, eat one and you'll go back for another.
Chocolate Candy Corn Cookies
{adapted from Everyday Food}
- 4 tablespoons unsalted butter, very soft
- 1/2 c sugar
- 1 large egg yolk
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 c all-purpose flour
- 1/4 c dutch-process cocoa (or regular unsweetened cocoa)
- About 36 candy corns
Beat/stir the butter and sugar with a wooden spoon until combined. Stir in the egg yolk, vanilla, baking powder, and salt. Add flour & cocoa, and mix until a dough forms.
Scoop out level teaspoons (a measuring teaspoon, not a cereal teaspoon) of dough, and place balls on baking sheets, 2 inches apart. (It looks like too little dough for each cookie, but it works.) Roll into balls.
Bake, rotating sheets halfway through, until edges are firm and cookies are dry to the touch, 10 to 12 minutes.
{While these are baking, start going through the bag of candy corn to find 36 good ones. You'll want to work quickly when they come out of the oven and it is very frustrating to keep grabbing broken candy corns. Trust me on this.}
Remove from oven; gently press a candy corn into center of each cookie (surface of cookies may crack slightly). The candy corns will stick once the cookies heat them up..they seem like they will fall off at first, don't worry.
Cool on sheets 1 minute; transfer to a rack to cool completely.
Make 32-36 cookies.
Tomorrow (the 31st) is Flavor-of-the-Month...Pumpkin!!!

ReplyDeleteMmmm...can I be your neighbor? I really wanted to go out and Boo some neighbors. REALLY wanted to. We've been here over a year, and know no one! The toddler daughter and I got out some ice cream cones and a cake mix and set out making some "cake cones." Great idea...but it FAILED. The cake bubbled out over the side of the cone...they all looked like some sort of weird Mt. St. Helens creation! Oh well - the preschoolers at Joy School enjoyed them immensely. *sigh* Much too ugly for neighbors I've never met!

ReplyDeleteHaha, I had never heard of "Boo-ing" before until we moved into our new neighborhood, and we got booed earlier this week. I'm bad though, I haven't bothered to Boo anyone else yet. Maybe tonight!

Have you tried the vanilla version of this recipe? You can make these fun cookies almost year round now that they have candy corn for Christmas, Valentine's Day, and Easter. I even found red, white, and blue candy corn once and made them for a 4th of July party!

ReplyDeleteThe problem with cookies like this for me, is that they look to be bite-sized (perhaps I have a big mouth?), and if I can eat it in one bite, I feel that I should be able to eat several. :) I must say, these look better to me than anything you have posted before, which is saying a LOT. We have some caramel flavored candy corn, which I suspect would work really well with the chocolate flavor.

ReplyDeleteKeely...hmmmm. I just looked at the recipe and it looks right. Make sure your butter is really soft and that it gets mixed up with the sugar well. It does make some elbow grease using a wooden spoon instead of a mixer. They only other thing I can think of is maybe to check your flour/cocoa amts.

ReplyDeleteI had the same problem as Keely. It took a LOT of work to get them to stick together so that I could make a ball out of them, so I added just a bit more butter. Then, I think my baking powder was bad, because they didn't spread out :( So, I gave up after the first dozen came out of the oven. I'll try them again for Christmas and see if I can get them to work, because they look SO good... and they were SO easy to mix up.

ReplyDeleteI found your blog because I was looking for something to do with left over candy corn. I made the with "caramel apple" flavor candy corn as well as regular. They were super easy to make. My five-year-old really enjoyed scooping and rolling. I really liked them. Now I have to figure out what to put one the cookies to use them at other times of the year....perhaps Reeces pieces?

I agree, the dough is really quite dry. I also had to add more butter to make it workable. They really are tiny cookies, not enough to cover a single cooling rack, but they are cute!

Aw man.. I wish I lived in yr country.. In Singapore halloweens not a big deal.. No trick or treating.. At the most we just go to an official haunted house but that's it.. Kinda sad, right..? Id love to have at least one chance of trick or treating and going house to house..
