One of Mr. E's Favorites : Mocha Toffee-Crunch Terrine

{We just call this "layered ice cream dessert", because we're fancy like that.}

Mr. E can't decide on his very favorite dessert, but this is one of them.  Frozen and's like a combination of cheesecake and ice cream. 

You know what I love about it?  It HAS TO be made ahead of time.  In my book, that makes it perfect for holidays and company! 

Mocha Toffee-Crunch Terrine {or Layered Ice Cream Dessert}
(modified from Everyday Food , issue #2)

19 chocolate wafer cookies
2 tsp. instant espresso powder
11 ounces cream cheese
1/2 c. sugar
1 TBSP vanilla bean paste (or vanilla extract)
1 & 1/4 c. heavy cream
1/2 c. toffee bits
1/3 c. chocolate chips, melted and cooled
1 TBSP dutch-process (or natural) cocoa powder

Line a 9x5" loaf pan with 2 sheets of plastic wrap, long sides overhanging by about 3". Arrange 3 wafers, flat side up in the bottom of the pan.

Dissolve the instant espresso powder in 1 tsp. water and set aside.

Beat the cream cheese with the sugar several minutes until light and fluffy.  Beat in the vanilla bean paste.  Set aside.

In another bowl, beat the cream until soft peaks form.  Fold the whipped cream into the cream cheese mixture in 3 additions until fully combined.

In one bowl, mix 1 and 1/3 cup of the vanilla cream mixture with the toffee bits.  In another bowl, add the cooled chocolate and cocoa with another 1 & 1/3 cup of vanilla cream.  Finally, add the coffee mixture into the remaining cream.

With a rubber spatula, spread the coffee mixture into the bottom of the pan.  Cover with 8 wafers, overlapping if necessary.  Add the chocolate mixture and spread evenly; cover with 8 more wafers.  Add the toffee mixture and spread.

Press the plastic wrap onto the top and freeze at least 4 hours.  Invert onto a serving platter; remove plastic.  Let sit 5 minutes and cut into slices.

  1. You have me at the ice cream. I think those cookies just made me develop a heart murmur. Which is most certainly the anatomically incorrect way of saying that my heart skipped a beat since I know NOTHING about modern medicine or even old fashioned medicine for that matter.

  8. Ever since she was little, my daughter has wanted an ice cream cake for her birthday. Every year f I bought her a Dairy Queen cake. This year I think she is getting Mr. E.'s favourite Mocha Toffee-Crunch Terrine!

    I love how you decorated these Dance cookies Bridget. The colourful dots around the border and then framing the photo with the sprinkles. It all comes together so perfectly.

  12. Garner....yes. I think I typed "beat" in the instructions, but, "whip" would probably be better. Whip it until soft peaks form. :)

  20. My 13yo daughter is on an homemade ice cream kick. Yesterday it was Cherry Frozen Yogurt and today Coffee Ice Cream. She served it to me with a dollop of fresh whipped cream and a drizzle of chocolate sauce. I think I like the teen years:) I know she's going to be all over this!

  23. Hey Shondra! You can buy a box of cookies made by Nabisco called "Famous Chocolate Wafers." The box is yellow and is always hard to find. In my grocery store it is on the end cap of the frozen food aisle by the ice cream cones, etc.

    You can certainly substitute the cookie part of Oreos of these...they are just a little smaller and thicker. Just scoop out the cream...what you do with it is between you and your kitchen. ;)

    Yes, before you start layering the cream, place 3 cookies, like a traffic light, in the pan. That way, when you invert and unmold it, there are 3 cookies on the top. You could totally skip this part, too. Or crumble the cookies! Whatever you want.

  38. I made this as our 4th of July cookout dessert! It was a huge hit. Absolutely delicious! I forgot to pick up the toffee chips, so I made my own. Also, the store didn't have chocolate wafers, so I substituted Archway Dutch cocoa cookies. It turned out perfect! Thanks for a recipe that is definitely a KEEPER.
