Once the package is open, all bets are off...there is a path worn in the kitchen tile from my feet going back and forth to the pantry to get just "one more."
{It doesn't hurt to make them the "Double-Stuff" variety.}
Homemade Oreos
1 batch of chocolate roll-out cookies (minus the espresso powder)
I cut these out using a 1 and 3/4" cutter and baked for 9 minutes.
{I also pressed a small heart cutter into the top, but not all the way through, before baking.}
Let cool.
Cream Filling
{source: The King Arthur Flour Cookie Companion: The Essential Cookie Cookbook }
1 tsp. plus a heaping 1/4 tsp. unflavored gelatin
2 TBSP. cold water
1/2 c. shortening
1 tsp. vanilla
2 and 1/2 c. powdered sugar
Combine the gelatin and water in a small bowl or cup. Place the cup into a larger bowl of hot water and leave it there until the gelatin is completely dissolved and liquid transparent.
Remove the cup from the hot water and let the liquid cool to room temperature, but hasn't begun to set...about 5 minutes.
Meanwhile, in a medium bowl, beat the shortening with a paddle attachment until fluffy. Beat in the vanilla. Add the sugar a little at a time, beating until the mixture comes together. Scrape the bowl as needed. Beat in the gelatin. Use immediately, or store, well-wrapped at room temperature.
{Makes 26 or so sandwich cookies if you don't eat too much of the dough.}

- flour (always more flour),

I love oreos even though they are soo bad for you. Your homemade version look just as good, if not better :)

ReplyDeleteJust curious... how much of a difference (if any) is there between using the dutch-process coacoa and the natural? When making these today, I used Nestle's brand cocoa (what I had on hand) and while the cookie is really good (it almost tastes like a chocolate pound cake but in cookie form), it's not nearly as dark in color as yours. Just wondering! I looove oreos!!!

ReplyDeleteI made these yesterday. I even did half the batch with peppermint filling, as my husband loves them. Verdict : Aaaweesome !! My only query is when I added the room temperature gelatine to the mix it went all stringy. So then I put the lot in a bowl of hot water and mixed and mixed and mixed by hand till it all came together. Maybe I didn't add enough water to the gelatine. Anyway, it turned out well. I wish I could send you a photo. Thank you, Thank you xx

ReplyDeleteI just made a batch of the filling for my niece as a little bonus birthday gift (yup, just the filling, I'm a cool aunt like that!) And I realised a little too late that I was out of vanilla, who runs out of vanilla? I did however have vanilla bean paste! Now her filling looks as if I scraped it from the center of a ton of cookies and a few fine oreo crumbs came along for the party. Success!
