Well, Heather has a new book out, Sea Salt Sweet: The Art of Using Salts for the Ultimate Dessert Experience. The title alone had me hook, line, and sinker. I can think of almost no better combination than salt with sweet.
You know what else had me? This picture...
Right out of college, I went to work for Delta Airlines. I have very vivid memories of standing in the airplane galley with some very southern flight attendants who were pouring bags of peanuts into their Cokes. I'd never seen such a thing!
Let's talk about some of the recipes you'll find in the book...
Bourbon Brown Sugar Pound Cake, Espresso Mousse Souffles with Fleur de Sel, Roasted Cashew Caramel Cheesecake, Buttered Popcorn Panna Cotta, Chocolate Malt and Fries Ice Cream Cake.

I can't wait to use the techniques in the book to start making my own salt blends, too! Sea Salt Sweet walks you through doing just that.

ReplyDeleteI love the addition of salt to balance out the sweet in desserts, but I've been unsure of buying my own sea salt to start adding to recipes. I love that she talks about the salt blends in the book too! Also, my dad has always put peanuts in his coke, and we're not even southern!

ReplyDeleteYou know, I'm not sure what to think about this book. I personally am SO TIRED of hearing about anything and everything under the sun being made into a "salted caramel" version I could scream. This summer I bought at our town's local carnival a caramel apple. It was SUPPOSE to be a normal average caramel apple. That evening when I went to eat it I discovered it was so salty (not the gourmet salt sprinkled on top, like a "salted" thing should be) , I guess in the caramel itself, I couldn't finish it, it was downright disgusting. I've never been able to not eat a caramel apple in my life, even if the apple is starting to get a little "old" that never stopped me before, I would just eat the caramel off of it. But boy I couldn't eat this. I've wondered if the person tried to do the "salted caramel" thing and just completely messed it up or was it completely accidental. I was so disgusted by it I didn't even want to walk down and get another one or see the cart again. It has completely turned me off of salted caramel. Now I don't know what to think when I see recipes like this. Personally I would really like to see this cookbook, read the recipes, and see what besides caramel she is "salting" before I would consider ordering it. I wonder what's going to be the "it" thing for 2016? In 2014 I think we dulce de leched everything to death, this year it seems to be the salted caramel and the "s'mores" fad. I know we're all getting flooded with pumpkin recipes right now but I think that's the time of year. No wonder there's a pumpkin shortage now! But so far I haven't noticed anything that seems to be coming to the forefront of the next big baking trend. Anyone have any predictions?

DeleteDon't let one bad experience ruin salted caramel for you. When it's done well, it's heavenly. But if your sensitive about salt, maybe this isn't the book for you. Perhaps you'll be able to find it in your library or browse it at a bookstore to peruse the recipes :)

As a Northerner transplanted into the South, I'm often a little puzzled and intrigued by some of these regional salty/sweet inventions, with peanuts and coke being one of them. I've always wondered if it's worth a try! However, I'll NEVER wonder about boiled peanuts- some Southern delicacies are beyond my adventurous palate!
