There's something I really love about a black-outlined red, white, and blue cookie. Exhibit A. That black just makes the colors POP (so to speak).
I knew I wanted to make a version of Bomb Pops for the 4th of July this year...not the traditional version, but some funky ones.
This one looks like the popsicle is wearing a star-shaped bow.
Y'all know how I love a simple cookie, so that's just what these are...simple. For all of their simplicity, though, you get a lot of bang for your buck. It's that black outline.
Like I said, I knew I wanted to make some type to Bomb Pop cookie, and then I saw this on Texas Humor's Instagram page. Oh, you know a Texas version had to happen.
To make the cookies, you'll need:
- cut-out cookies: tombstone, star, and Texas shapes
- food grade popsicle sticks
- royal icing: tinted with Americolor Bright White, Super Red, Super Black, and Chefmaster Royal Blue
- piping bag
- #2 icing tip
- squeeze bottles
- toothpicks
- patriotic sprinkles
Roll the dough out to 3/8" thickness. Piece shapes together, or cut stars as needed. Freeze the shapes for 10 minutes before baking.
Once baked, immediately insert a popsicle stick into the bottom center of each cookie. As the cookies cool, the dough will adhere to the stick. Let the cookies rest on the sheet for 5 minutes before removing to a wire rack to cool completely.
Use a #2 tip to outline the cookies in black icing.
Thin the remaining icings with water, a bit at a time, until when a knife run through the center, it creates a line that disappears in 15 seconds. Cover with a damp dish towel and let sit for several minutes before pouring into squeeze bottles.
Fill in the outlines. Use a toothpick to guide to edges and pop large air bubbles. Where colors will touch, let one color dry for 30 minutes or more before adding the second color. An oscillating fan helps speed this process.
For the "white chocolate-coated" cookies, let the base color dry for at least one hour before adding the white. Add the sprinkles.
Let the cookies dry uncovered 6-8 hours or overnight.
To make the double-decker cookies, let the cookies dry overnight. Pipe some of the remaining black icing onto the back of mini stars. Press onto the dried larger cookie. Let the icing set for an hour or so before packaging.
Cookie Pops > Bomb Pops. Yes? YES.
