It all started innocently enough...with my first job out of college...as a flight attendant for Delta Airlines.
We served these:
Biscoff Cookies. If you've never had one, they are crunchy, cinnamon-y, and perfect. Delta, I believe I owe you $724 for the cookies I consumed while on board.
So, while tweeting about my love for Biscoff with Kristen one day, the people FROM BISCOFF tweeted me (*happy dance*) and asked if I knew about the Biscoff Spread (um, no). Would I like to try it? (Um, YES!!!)
Biscoff Spread is a lot like peanut butter...except yummier. (Sorry, peanut butter.) It tastes just like the cookies. We've been eating it on graham crackers and the rice cakes that I buy once a summer thinking they'll help me look like Heidi Klum.
So, I thought...why not brownies?!? And you guys, they are delicious!
{And aren't they pretty?}
Biscoff Brownies
For the Biscoff swirl:
1/2 cup Biscoff Spread
4 ounces cream cheese
2 TBSP sugar
1 egg
For the brownies:
1 cup dutch-process cocoa
1 tsp. kosher salt
1/2 tsp. baking powder
1 & 1/2 sticks unsalted butter
2 cups sugar
1 TBSP vanilla
3 eggs
1 cup flour
Preheat oven to 325. Grease a 9 x 13" pan.
Beat the all of the ingredients for the Biscoff swirl until well combined. Set aside.
Combine the cocoa, salt and baking powder, set aside.
In a medium saucepan, melt the butter over low heat. Turn off the heat; add the sugar and stir to combine. Return to the heat until it's hot again, but not bubbling.
Remove from heat. Stir in the cocoa mixture. Whisk in the eggs and vanilla until smooth.
Stir in the flour. Pour into the prepared pan and smooth evenly.
{This little drip makes me happy.}
Dollop the Biscoff mixture on top of the brownie batter.
Use a table knife to gently swirl the mixture, making sure each piece with have a little bit of the swirl.
Bake for 30-35 minutes. The swirl will look set, but the brownies will still look soft in the middle. Cool on a wire rack before cutting.

One look at those babies and I am licking the screen, I tell you. When I was little, I used to have to sit patiently in the hairdressers whilst my mum had her haircut. To keep me sweet, so to speak, she used to give me her individually wrapped Lotus biscuit. I can still taste them now. What a shame we don't get Biscoff spread in the UK.

ReplyDeleteI found the spread at Central Market and about shreiked when I learned of its existence! It's got so many calories in it though I can't bring myself to read the label when I eat it but daaang is it good. The cookies are crazy easy to make too. Taste so good you can't tell them at all from the premade ones.

ReplyDeleteI always think about you when I fly Delta now. And when someone isn't that nice I think to myself, "Bridget would have never acted like that. She's way too nice. They could learn a lesson or two from her." Now when I ask for the Biscoff's I think of you too, and send up a cheers with a cookie and a Coke to ya from the air. Which is a freakishly good combo by the way.

ReplyDeleteWow, those look good. I went to amazon to look it up-- $18 for 2 jars!! Those would be some expensive brownies. I love the cookies, though, so I'll keep my eyes out for it locally. I doubt I'll find it here in the midwest, though. :( I wonder if a place like Trader Joe's would have something like that.

ReplyDeleteI never knew that what we, in Belgium, call 'Speculoos' also exists in the USA! The spread is actually a belgian invention, I even used to make it myself, or at least, the 'spread' which was the origin to the official spread. It's not so hard to do. So a little recipe for those who can't find the spread, but do have the cookies: take a bowl of warm coffee and dip the cookies in it. When you lay the cookies aside, they will soak up the coffee and fall apart. Mix a bit and tadaa! You've just made simplified Biscoff (or Speculoos) spread. I don't know if it'll work in the recipe, but at least now you can try. (you can also directly lay the soaked cookies on your bread, like I always do)

ReplyDeleteI live in Belgium, about 2 kms from the factory of Lotus. Need I say more? ;-) The cookies are called 'speculoos' here and they became really famous because of 'sinterklaas'. I use them (and the paste too) in lots of recipes (for instance as the bottom of a cheesecake). We have different kinds of speculoos here, but Lotus is my alltime favorite. If you want me to send you some recipes, just e-mail me!

I dont think biscoff exists in the UK (sob...) but these look just plain awesome, and so pretty! impressive little brownies indeed. Lovely recipe and if one day i get my hands on some biscoff i promise you i will be making these for sure! :)

I found Biscoff spread at Wal-Mart last month. Same aisle as peanut butter!
ReplyDeleteI found it today at Meijer (midwest chain) right next to the peanut butter. It was a total accident-- I was getting PB, and there it was! I never would have expected to find it here. It was $5.29-- still pricey, but worth it to give it a try. I love the cookies!

Whenever I'm booking a flight, I get excited when Delta is cheapest (I'm not loyal to one airline) because that means I get Biscoff cookies! I've been walking past the Biscoff spread in my grocery store for about 4 months now. I'm afraid to buy it because I know I'll eat it way too fast!

ReplyDeleteJust popped these into the oven, I hope they turn out because I put them into a 11x 7 pan instead of the 9 x 13 one you recc'd. The brownie dough was thick (like the Alice Mederich brownies) and I was in a hurry and trying to spread out that small amount into a big pan just wasn't on the menu today, so long story short, these filled the 11 x 7 about halfway with blobs of biscoff/cream cheese mix on top.
