Peeps Show S'mores Bars

Confession: Until yesterday, I had never eaten a Peep.

We grew up in an all-chocolate-and-jelly-bean Easter basket family.  {I love Easter.}

So, fast-forward to yesterday...I made Peeps Show S'mores Bars.  Peeps, combined with semisweet chocolate and a graham-crackery, oaty crust, baked until melty and gooey and messy?

I love Peeps now, but honestly after taking a bite of one plain, I ONLY want my Peeps baked into these bars.

Scroll on down for the recipe, but here's what you're going to do...

First, Steal all of the Peeps out of your children's Easter baskets.
{I kid; I kid. RUN to the store Monday and stock up on them at half-price.}

OK, you'll make a crust/topping concoction with butter, oats, brown sugar and a few other ingredients...

{It comes together really fast.  You won't even need your mixer...just a saucepan...

...and a spoon.}

...about half goes in a pan for the crust...

Here are the ingredients for the filling:
{Hello, Peeps.}'ll top the crust with chocolate chips...

...and some Peeps...

...and top with the rest of the topping/crust mixture...

You'll let it rest for a bit, then you'll dig in.
It's gooey and may not be elegant, but it WILL make your eyes roll back in your head.  You might even moan a little.

Peeps Show S'mores Bars

6 TBSP salted butter
1/4 cup packed light brown sugar
6 TBSP dark corn syrup
2 & 1/4 cups rolled oats (not instant, not steel cut)
1/2 cup all-purpose flour
1/2 teaspoon kosher salt
1 cup graham cracker crumbs
1 & 1/4 cup semisweet chocolate chips
15 Peeps

Preheat oven to 350.  Grease an 8x8 pan.  Set aside.

In a medium saucepan, heat the butter, brown sugar and corn syrup over medium heat, until the butter is melted and sugar has dissolved.  Remove from heat and stir in the oats, flour, salt and graham cracker crumbs.

Press a little more than half of this mixture into the bottom of the prepared pan.  Place on a wire rack and let cool completely.

Sprinkle the chocolate chips evenly over the cooled crust.  Top with the Peeps, making 3 rows of 5 Peeps.

Cover with the remaining topping/crust mixture.

Bake for 20 minutes; the Peeps will looks slightly misshapen under the topping.

Place on a wire cooling rack and let cool for 20 minutes.  Serve warm.

{These bars are good at room temperature, too...but are a-MAZ-ing warm.}

What are you waiting for?!?  Go get some Peeps!

  1. This looks amazing! Great for all of those half-priced Peeps I'll buy next week :)

  2. oh my word, I have only tried a peep once, and I did not like it at all:( But in this, this I could love!

  3. I am in love with the oatmeal and graham cracker crumb crust and crumble topping! We may of had peeps when we were kids but we sure enough never had anything like this served up at Easter! Happy Easter Bridget :)

  4. Wow, I've been sick and haven't eaten in over 48 hours and this looks delicious!! I wasn't really hungry until this post. Thanks for sparking my appetite :)

  5. that's awesome! I too haven't ever had a Peep, I did finally break down and buy a box of the pink bunnies for the girls for Easter. However, I could totally get on board with this, i love oatmeal crust anything!

  6. Peeps, Peeps, PEEPS! I love Peeps. I, too never had these as a child. I was deprived. (My mother didn't know how to cook eggs either so we had horrid grey/yellow yolks in our dyed Easter eggs, yuck.) However, as an adult I've made up for lost time. I like them straight out of the box and sometimes I stick them on a fork, hold it carefully over the flame on my gas stove til they're perfectly cooked. You are GENIUS. This S'more cake idea is my idea of heaven. Going to make it next week. Thanks a million! Wishing you and yours a Hippity, Hoppity, Happy Easter (or Passover) day!

  7. These look absolutely incredible!

  8. Oh, Bridget! I'm so trying this with my peeps this year. Delish!

  9. I still have peeps from Christmas!

  10. I enjoy Peeps from time to time, but my wife introduced me to the most awesome flavor: Chocolate mousse. I can only imagine how deliciously they would work in this recipe.

I think I need to go stock up on Monday...

  11. These look awesome! I think I'll make a double batch tomorrow to take into work on Monday! (do you think they'll hold up for a day? I figure I'll store them covered at room temp...)

  12. I must confess...I've never eaten a Peep either! I'm much more of a chocolate Easter gal:) But I'm also a deal gal, so maybe I'll have to pick some up half price after Easter and try this recipe. Beacause I'm also a Smores kind of gal!

  13. Thank you for making me feel not-so-alone in never having had least until this year. I had to buy some to make Peep S'mores, or S'meeps, as my girlfriends and I decided they should be called (our sugar high perhaps aided by a bit of white wine). :)

[And then "S'meeps" quickly became a part of speech..."These are S'meeping awesome!" HA!

Thanks for the idea! I'm pinning this for next year. Gotta take my Peeps to the next level.

  14. I am a lifelong peeps fan, but this looks like a fun bar. Love the pops of color in there!

  15. "Until yesterday, I had never eaten a Peep." <--- I do not speak this language. Lol

Glad you got on board and WOW these are so perfect..the smores, oats, krispy action, PEEPS. Great job, Bridget!

  16. What a CUTE and YuMMy treat!
I know those PEEPS were so excited to be part of such a FANCY~SMANCY dessert!

    I'm totally kidding.
I really shouldn't try and comment past 10:00 at night~
    I get delirious. ;)
    LOVE this PEEP treat Bridget!
Happy Easter to you guys in Texas!

  17. I am not a Peep fan but I love chocolate chips. :) It does look very interesting and I am sure it has a great taste. Happy Easter!

  18. You just gave me the best excuse to go get Peeps in the Easter candy sales tomorrow!

  19. Just saw these pinned and had to come dashing over. Awesome way to play with Peeps!! Happy Easter to you and your family :)

  21. yes please! i love peeps just plain but fancy them up and even better!!

  22. Easter confession: I've never tried Peeps either.

  23. #1 I love that you call these Peep Show Bars. Adorable.

#2 The fact that you had a Peep-less childhood kind of makes me want to cry. And give you a hug.

  24. HA! M,T&L had chocolate and jelly beans in their baskets!

  25. I better go find me some peeps! Yum!

  26. Yum! A perfect Easter left-over treat! Love the idea of a double crust. Can't wait to give this a try!

  27. You hadn't eaten a Peep until yesterday? How are we even friends?

  28. I'm not going to lie...I'm shocked that you have not had a peep before today. They're so good! Love this recipe--I don't think it can get any better than peeps, chocolate, and brown sugar. Definitely will have to try this. Great idea!

  29. You baked the birds! LOL Poor Birds.

  30. Your blog is so amazing. Thanks for share it with all of us. If you want to take a look, this is my new blog

  31. I just gained 5 pounds reading about this sweet deliciousness! You are brilliant Bridget!

  32. Confession: I have YET to eat a peep. But with a post like this one, I'd be crazy not to try!

  33. Hi Bridget, just stopping by to say how delightful your blog is. Thanks so much for sharing. I have recently found your blog and am now following you, and will visit often. Please stop by my blog and perhaps you would like to follow me also. Have a wonderful day. Hugs, Chris

  34. B!!!!! How have you lived this long without a Peep?! I like mine left out a day or three so they are stiff when I eat them. It grosses my mom out.

On another note, I just got a hilarious mental of you, these, and the famous "when Harry met Sally" scene...

And finally, this is not normal, but I'm getting the oddest little kick out of these poor sweet innocent Peeps going into the oven! I may need counseling, lol!

  35. I"m not sure I've ever eaten a Peep either...but my kids LOVE them. I think baked into delicious s'mores bars is the best way to be ushered into the world of Peeps :)

  36. I really hate peeps (or anything marshmallow-y...I know..I know.. ;) BUT my fiancee loves peeps, so I may have to surprise him with these! I should probably run to the store shortly for some half-off Peeps before they are all gone! :)

  37. Looking forward to eat the first peep of my life! Lovely recipe ;)

    "Happy Cooking"

  38. Now I remember why I follow your blog x

  39. I love everything in this recipe...Such a fun filled treat for everyone!

  40. I just tried this with my half-price peeps... Fantastic! It was like an oatmeal cookie from heaven! Thank you!

  41. You are so creative! How did you come up with this?!?
It looks great and I'm anxious to test out the recipe.
I actually hate Peeps plain, so I like having a recipe to transform them. Thanks!

  42. I just made a pan of these and they are so crazy good that I am trying hard not to eat the whole pan.....your recipes are so good. I've made your darth vader cookies that were a huge hit, too. Thanks for sharing!

  43. I've never been a Peep person myself either, but I think when combined in this treat they'd be a hit.

  44. I made it last night, for a Game of Thrones get-together with my friends. Though I only had honey instead of syrop and whole-wheat cereal instead of rolled oats, it was a huge hit! Thank you so much for sharing!

  45. I accidentally set some Peeps on fire last year in pursuit of a Peeps s'mores tart! This looks delicious and much less terrifying (Peeps burnt to a crisp still taste good, but look like a horror show) -- will have to try it!
