See, the original plan was to make 7-layer cookie ice cream sandwiches.

Oh, I like Plan B even better than Plan A. You know why?
Chocolate sauce.
Yes, it's straight from the can. I always give my husband a hard time about having chocolate syrup from the can. The truth is, I like it, too. {Shhh...don't tell him.}
I've never put 7-layer cookies on the blog before because, since my mom made them so often when we were growing up, I just assumed everyone already had a recipe for them. Then kiddo took some to school, and some of his friends had never eaten one before.

"Psst. Hey buddy, over here. You want some cookies?"
- They are called "7-layer cookies," despite a rumor that they are called "Hello Dollies."
- They are really yummy, and easier to cut, when served cold. I keep mine in the fridge.
- Be sure to use sweetened condensed milk, NOT evaporated milk.
- Served a la mode using this (7-layer cookie) ice cream, topped with chocolate sauce will cause extreme happiness.
7-Layer Cookies
1/2 cup salted butter, melted
1 1/2 cup graham cracker crumbs (very fine, process in food processor or buy crumbs)
1 cup sweetened coconut
6 ounces semisweet chocolate chips
6 ounces butterscotch chips
1 (14 oz) can sweetened condensed milk
1 cup finely chopped pecans
Preheat oven to 350. Lightly grease an 11 x 7," 12 x 9" or 13 x 9" pan. Combine the melted butter and graham cracker crumbs and press into the bottom of the pan.
Layer the coconut, chocolate chips, and butterscotch chips on top of the graham cracker crust.
Pour sweetened condensed milk over the top.
Bake for 25 minutes. Remove to a wire rack to cool completely, then refrigerate.
{It's not necessary to line the pan with foil like in these pictures, but if you do, you can easily lift the bars from the pan for cutting.}
You went there and then you sprinted past! Holy moly that looks amazing, those are my favorite bars and I've never thought of going ala mode, that's a whole nother level, I think I love you!

Will the outcome be affected if I substituted unsweetened coconut for the sweetened version, other than the cookies turning out less sweet? I've only seen unsweetened coconut in the shops where I live.

Also we put the butter in the bottom of the dish and melt it in the oven while it is pre-heating, then add the graham cracker crumbs and mix it in the dish - one less thing to clean to add to the wonderful eats.

OH yeah I know this cookie well. Though, I also add coconut flakes, and in our family they're known as 'magic cookie bars' - so, perhaps not entirely the same thing. But OH.SO.GOOD!

Anyway, I love these bar cookies- especially during Christmas time and cookie exchanges because you can make a ton in just a few minutes. I have even switched up the "layers." White chocolate chips, craisens, coconut and pistachios is one of my favorites although the combinations are only limited by your imagination. Thanks for posting!

ReplyDeleteYummm. My good friend has an amazing (and similar) recipe for these as well, and our group was in LOVE with them. We were also pretty impressed at how easy they are to make and how quickly they were devoured. But we called them "magic cookie bars" which only got mildly awkward once we got into university and people started questioning what was in them.... hahaha.

ReplyDeleteI just made these last night! While the cookies are delicious I would have made one adjustment... I lined my pan with foil and sprayed the foil - what I should have done is sprayed the pan AND the foil. The butter and milk ooze out and cause the foil to stick to the pan. Next time I will be more careful. Thanks for a great recipe!
