I think this holiday book may be my favorite. Of course, I said that about Ree's last one and the one before that, but I really, really love this book.
The Pioneer Woman Cooks: A Year of Holidays is divided up by, you guessed it, holidays. You'll find recipes for Valentine's Day, Cinco de Mayo, Thanksgiving, Christmas, New Year's Eve...and everything in between. All total: 140 recipes, all presented in Ree's signature step-by-step style.

Now, let me introduce you to a cake.
I have a thing for Bundt Cakes, but only a GOOD Bundt. This is a GOOD one. Like, reeeeeaaaaallllly good.
A boozy cake. A boozy cake from Ree's book that is responsible for my extra three pounds this week.
I made Ree's cake and *promised* myself that I would have just a sliver after taking the pictures. You can see in one of the pictures that the first slice out was really small. That was my slice.
THEN, I decided that you really couldn't see the beautiful, moist cake, so I sliced off another piece...this time a pretty big honkin' piece.
I took the pictures, stood (I didn't even bother sitting) over the table, and INHALED both pieces. Inhaled, I tell you.
This cake is fantastic. I'm not sure if it's the booze, or the brown sugar pecans on the top, or the one and a half sticks of butter that are melted and poured over the cake after it bakes, or what. The combination of it all is magical.
[Note: the cake recipe calls for rum, and I used Kahlua...did you know Kahlua is rum and coffee liqueur? You do now!]

Christmas Rum Pudding Cake
{from The Pioneer Woman Cooks: A Year of Holidays}
Cake:
1/2 cup lightly packed brown sugar
1/2 cup finely chopped pecans
1 box yellow cake mix
1 (3.4 oz.) package vanilla cook-and-serve pudding mix
4 eggs
1/2 cup water
1/2 cup canola oil
1/2 cup dark rum (or Kahlua)
Glaze:
3/4 cup (1 1/2 sticks) butter
1 1/2 cups sugar
1/4 cup water
3/4 cups dark rum (or Kahlua)
Preheat oven to 325. Thoroughly grease a Bundt pan. Sprinkle the brown sugar and pecans in the bottom of the pan.
In a bowl of an electric mixer, beat the cake mix, pudding mix, eggs, water, oil, and rum. Mix until smooth and totally combined.
Pour the batter into the prepared pan and bake for 50-60 minutes until a toothpick comes out clean.
When the cake has about 10 minutes to go, make the glaze. Melt the butter and sugar in a saucepan over medium heat. Then add the water and bring to a boil. Boil for 4-5 minutes, or until thick.
Turn off the heat and add the rum. Turn the heat back on and cook for 1 minute more.
Remove the cake from the oven and let it cool in the pan for 5 minutes.
Use a skewer or toothpick to poke holes all over the surface of the cake. Drizzle half of the glaze over the cake and down the sides. Let it sit in the pan for 10-15 minutes, letting the glaze soak in.
Carefully invert the cake onto a serving platter. Slowly drizzle the remainder of the glaze over the top, giving the cake a chance to absorb as much as possible.
Let the cake sit for a couple of hours to make sure it's really moist and rummy...or Kahlua-y in my case.
Eat. Two pieces...while hovering over the table. It's too good to waste time sitting, people.

Here in Norway, it's tradition to serve rice porridge on Christmas morning, and one bowl will contain an almond hidden in it. Whoever finds the almond, wins a little prize (usually a board game that the whole family can enjoy).

I always make Sticky Buns for Christmas morning. We have many other holiday food traditions that my children have come to look forward to. I hope they will adopt some of these family loved traditions when they're grown. One that my mother passed to me was to add linguica to out turkey stuffing.

We had to have done something wrong as it bombed and now the kids refer to it as the "Knock you out the door brownies"... Still don't know what we messed up as we make a lot of recipes from her e-mail send outs and they always taste good but that one - we still shake our head at.

My favorite holiday tradition is a traditional Thanksgiving dinner. No matter how healthy we eat during the rest of the year, I tend to be a purist when it comes to Thanksgiving. Stuffing and Pumpkin pie is always a must.

ReplyDeleteFor decades my whole family has had a Christmas morning tradition of gathering at a family member's home and having a breakfast feast of buckwheat pancakes with real maple syrup. This is the only time of the year we eat them and we pig out. If there is a new family member (i.e. new husband or wife) present we initiate them by slapping piles of buckwheats on their plate when they aren't looking and then count to see how many they can eat!

ReplyDeleteMy mother-in-law tends to run around like crazy at the last minute trying to keep certain things warm, making sure the meat's cooked all the way, and trying not to burn the stuffing. Seems like, after 15+ years of Thanksgiving and Christmas dinners, she'd have it down pat but it's always fun to see what will and won't work out. It's never bad enough to ruin dinner, but we always have to laugh a little and give her a hard time.

ReplyDeleteMy favorite tradition is a Slavic Christmas Eve dinner of cabbage/potatoes, pierogis (home made) and creamed mushrooms. It's simple but satisfying and it goes back a long way in my ex-husband's family but is carried on by me and now my children.

We were told that we couldn't have dessert, so when no one was paying attention we took a pie and two forks and went to hide in the outside utility closet. We had a great time making ourselves sick on pie. It was totally worth the punishment! Now my grandmother makes a special pie just for us each year and we still sneak it out!)

Just last night, I once again made her Restaurant Style Salsa and her Pico de Gallo--both are wonderful! My favorite holiday tradition is is making Christmas cookies with my mom - every year we do the old favorites but then also try at least one new recipe. It's great fun and a great way to spend time together. I can't wait until my daughter is old enough to help!
ReplyDeleteI love Christmas Eve at my parents house, a table full of deliciousness - french onion soup, steamed shrimp, bacon wrapped scallops, etc.
ReplyDeleteI LOVE LOVE LOVE to make Ree's cinnamon rolls! I would love this cookbook - I drooled over it in the store just the other day. Has some wonderful sounding recipes... and what a great idea to separate them by holiday :)
ReplyDeleteI have not tried on of Ree's recipes, but I read her blog and sometimes what she makes influences what I make. And I've pinned a lot of her recipes.

ReplyDeleteMy favorite holiday tradition is spending the night at my sister's house with all of the cousins. Not my husband's favorite. :) I have 5 sisters and with all of our kids, there are 16 cousins (ages 1-19) that all sleep in the same room and wake up together on Christmas morning. So much fun and so many great memories.
ReplyDeleteI know it is totally stereotypical, but I adore pumpkin pie at Thanksgiving. Heck, pumpkin pie anytime! It's the best!

ReplyDeleteI've made Ree's cinnamon rolls from her blog (yum), her best ever frosting made w/flour (so weird, but SO good), her chocolate cake, not sure what else. Everything I've ever tried of hers is super good.

ReplyDeleteWe've had my Grandma's amazing pumpkin bread every Thanksgiving for as long as I can remember and even though she's no longer with us, I've carried on the tradition!

Our family looks forward to the traditional nut shortbread cookie rolled in powdered sugar. It is a southern cookie usually served at bridal and baby showers. There are never any left over, perfect with a cup of coffee or tea, yum!

ReplyDeleteI've made so many things from Ree's blog. Love her recipes. Probably the one I make the most is her restaurant-style salsa. I always have that in my fridge...it's the best. I also love her cheesy Mexican rice and French onion soup. Yum!

ReplyDeleteYes I have tried many of Ree's recipes all are amazing but last year I wanted to spice up our sweet potatoes for the holidays and you can not go wrong with her holiday recipe for sweet potatoes!
