After recipe testing and many, many batches of caramels...salted and chocolate salted...I can say unequivocally that I am a fan. Maybe a bit obsessed.

Y'all, homemade caramels are easy to make! No really! And these caramels are soft, creamy, buttery. They're DREAMY.

One batch makes a TON! You don't realize it until you're wrapping each piece in waxed paper...which does take forever but is oh-so-cute and worth it. *spoiler alert* My Christmas list is absolutely getting caramels this year.

    can you use half and half instead of cream? i am lactose intolerant and have found a lactose-free half and half, but never lactose-free cream...

      They do sell lactose free cream but I am not sure if they do where you live. I live in Victoria, BC Canada and they sell lactose free cream in Thrifty Foods, Fairways and The Market. Good luck!
