Hot Chocolate Overnight Oats

The most satisfying part? That CRACK of breaking through the chocolate layer with a spoon. Who needs the sound of frying bacon anyway


If you're new to overnight oats, here's the deal. You'll stir everything together the night before, and the oats and chia seeds absorb the liquid and become creamy. For our hot chocolate overnight oats, melted chocolate on top will also harden in the fridge overnight.

Using cocoa and vanilla in the oats with a swirl of marshmallow creme and a layer of chocolate on top really captures the flavor of a (cold) hot chocolate!

Let's Make Hot Chocolate Overnight Oats!

Hot Chocolate Overnight Oats ingredients

You'll start by stirring together the main ingredients for the bowl: oats, chia seeds, cocoa, Imperial Sugar light brown sugar, salt, almond milk, vanilla, and yogurt. 

[NOTE: I make these virtually dairy-free by using Forager Cashew Milk Yogurt and almond/coconut milk. The chocolate may have a smidge of dairy, depending on what type you use.]

Divide this mixture into two bowls. I like to use wider, mini "latte bowls" here for a thinner layer of chocolate on top. If you use mugs, the chocolate layer with be thicker. To quote Jerry Seinfeld, "not that there's anything wrong with that."

Spoon marshmallow creme into a piping bag or ziptop bag. Melt the chocolate.

Pipe a swirl of marshmallow creme over each bowl of oats. (You can also just spoon it over.)

Slowly pour melted chocolate over the top to cover.

Chill in the refrigerator overnight.

The following day, use your spoon to crack through that chocolate layer! AH! What a way to start the day! 

Oh, and if you want to make these extra festive...top them with a sprinkling of mini marshmallows.
