
So, for Thanksgiving, I tried a new tart recipe. It was different than any recipe I'd ever tried before. I was sure the heavens would open and angels would sing as we sliced into it.
Reality? It was horrid.



Coconut Cream Pie Ice Cream (that saved the day)
{hint: make sure all of your ingredients, other than sugar, are well-chilled}
2 eggs (pasteurized, if you'd like)
3/4 cup sugar
2 cups heavy cream
1 cup milk (2% or whole)
1 (15 oz.) can cream of coconut (such as this, not coconut milk)
1/2 cup shredded sweetened coconut
3 full graham cracker sheets (some crushed fine, some in chunks)
In a large bowl, whisk the eggs 1-2 minutes. Slowly whisk in the sugar. Once all of the sugar has been added, whisk for 1 minute more.
Whisk in the cream, milk and cream of coconut. Pour into an ice cream maker and process as directed.
With 2 minutes until the freezing cycle is over, add the coconut and graham crackers.
When the ice cream is finished, transfer to a freezer-safe container and press plastic wrap directly onto the ice cream. Freeze several hours, or until hardened. Before serving, remove from freezer and let sit on the counter for 4-5 minutes.

Oh my, I'm sorry your tart did not turn out as hoped. Glad to hear that your Dad made it to your Thanksgiving dinner though. I'm guessing that no one missed the tart one bit. This ice cream sounds heavenly. Happy Thanksgiving Bridget!

You sound just like me! I have a great chocolate chip cookie recipe that I haven't made in months in favor of other new recipes I've found...and haven't liked as well!

ReplyDeleteI'm glad I wasn't alone! I made rolls that were a huge fail! I had a feeling when they didn't rise the 1st time, that I should have just stopped and made another batch. Nope, I kept pushing on with the recipe. My rolls became hockey pucks! But! I had ice cream for dessert! Homemade vanilla ice cream and cinnamon with candied pecan ice cream (along with pumpkin pie, Toll House pie, and poppy seed cake). For 6 people! Yeah, I kind of went over-board on desserts :)

ReplyDeleteI tried a new pumpkin pie recipe yesterday instead of my old standby. It wasn't bad, per se, but it wasn't as good as my other recipe and it didn't look that pretty either. My husband couldn't understand why I'd mess with a recipe on Thanksgiving of all days. I definitely should have made an ice cream back up dessert too!

ReplyDeleteA wonderful, worthwhile lesson--I hope you guys enjoyed your Thanksgiving feast nonetheless! I'm no longer allowed to make ice cream for holidays because I have to travel (although one of these days I will totally manage to sneak on a tub of homemade ice cream packed in dry ice...or not), but I can't wait to try this in my own kitchen.

I made some rolls for Thanksgiving... but I bought a bag of backup rolls JUST IN CASE my other ones were a flop, lol! I love how your ice cream looks like it's sitting in snowflakes :)
ReplyDeleteThis has totally happened to me before! like destroyed my dessert at a dinner party, and all I did was rely on some ice cream that I happened to have in the freezer- it's always a hit! This version looks amazing as I am obsessed with coconut!

I made a recipe a couple weeks ago, luckily it wasn't a holiday, that I thought would just be the best thing ever, and though there was nothing truly wrong with it (i.e. it baked properly) I couldn't stand it. Sometimes recipes are strange that way.
ReplyDeleteI am always leery when I make a new dish that I haven't had before for a party or get together but sometimes I just gotta go for it, by that I mean 99% of the time. Good thinkimpng on the backup, I can't see why it wasn't slated as the main event from the beginning!

ReplyDeleteHope you had a great Thanksgiving. I have been dropping some very unsubtle hints at my husband for an icecream maker as a birthday present in a few weeks time. I've been tempted to tear a picture of one out of a catalog and tape it to the fridge door. Maybe I'll print this post out and tape this up instead.

ReplyDeleteI made this over the weekend and it's delicious! Very rich and great coconut flavor. I really like the idea of the graham crackers but it they didn't stand out very much compared to the coconut. Not sure how I'd change that though. Thanks for posting, it's a keeper.
