Sweet Potato Pie

Sweet Potato Pie is decidedly unsexy.  I think it's the word "potato."

It may not be sexy, but sweet potato pie is GOOD.  Now, I love my pumpkin...in all kinds of baked goods...but I must say, where pie is concerned, I prefer sweet potato.

And I have a confession to make...I made the pie yesterday and today at lunch, it was calling me from the fridge.  I kicked off my boots, put on my comfy socks, curled up in the big chair in our bedroom, flicked on my DVR'd Real Housewives of Beverly Hills, and ate PIE for lunch.  It was the best, most decadent lunch EVER. 

The pie is really pretty simple.  (And I'm begging you to give it a try.)  If you cook the sweet potatoes the day before, you can put this pie together in a jiffy.

Sweet Potato Pie with Brown Sugar Whipped Cream
{slightly modified from Everyday Food, issue 7}

sweet potato puree:
3 large sweet potatoes
water to cover

10 graham crackers (the full sheets, rectangles)
3TBSP sugar
1/2 tsp. ground ginger
pinch kosher salt
5 TBSP unsalted butter, melted

3 eggs
1/2 c. sugar
1 and 3/4 c. cooled sweet potato puree
1/2 c. half and half
1 TBSP fresh lemon juice
2 tsp. vanilla
1 tsp. kosher salt
1/4 tsp. ground allspice

whipped cream:
1 c. heavy cream
1/2 c. light brown sugar

Peel the potatoes and cut into chunks of approximately the same size...about 1.5".

{Do NOT place the peels in your garbage disposal...so say my notes from "The Thanksgiving without a working garbage disposal, 2003."}

Place in a dutch oven, cover with water and bring to a boil.  Boil for 15 minutes, or until tender with pierced with a paring knife.  Drain in a colander, then transfer to a food processor.  Process until smooth.

Set aside to cool. (This will make more than you'll need for the pie.)

Place an oven rack on the lowest shelf and preheat oven to 350. 
Use a food processor to combine the graham crackers, sugar, ginger and salt until finely ground.  Add the melted butter and pulse until moist crumbs form.

Dump the mixture into a glass 9" pie pan and press into the bottom and up sides of the pan.  Set aside.

In a large bowl, whisk the eggs and sugar until blended.  Whisk in the cooled sweet potato puree, half and half, lemon juice, vanilla, salt and allspice until completely smooth.  Pour into the prepared crust and use an offset spatula to smooth the top.

Place the pie on a cookie sheet and bake 40-50 minutes until set.  The pie filling should not jiggle much at all when shaken. 

Transefer to a wire rack to cool, about 2 hours.  Refrigerate once cooled. 

Before serving, make the whipped cream.  Chill the bowl and whisk attachment in the freezer for a few minutes before whipping.  Beat the cream and sugar together until soft peaks form.  Dollop on the pie.

Promise me you'll make it?  Ok?  After one bite, you might decide sweet potato pie is sexy after all.

  10. Sweet potato pie for lunch is a great lunch! You know you were going to have a little piece even if you ate a regular lunch, so you might as well just save the calories for the pie ;) That's my attitude this time of year :)

  13. My Mom makes sweet potato pies every year for thanksgiving and people put in their requests months in advance. Its ridiculous how each of us can sit there and eat a whole pie to ourselves. The pictures made me teary eye and made me miss my Mom even more (she lives in Hawaii we're stationed in Georgia). I keep asking her for her recipe but she gives me the basic ingredients and tells me to keep adding til I get the taste just right. I tried one year and never tried again. This year I will try and bribe her to write down and measure ;-) but when you have been making it for over 40 years I guess there are no real measurements.

  35. Your pie looks fabulous. Sweet potato pie is even more delicious if you roast the sweet potatoes first instead of boiling them. They naturally caramelize as they roast, and it is just amazing.

I cook my sweet potatoes in the microwave, then pull the peels off the cooked potatoes (so much easier than peeling raw sweet potatoes) -- I also add about 1/4 cup of room temp apple cider to the potatoes in the food processor. (BTW, the peels are great for the compost bin --- next spring your garden will thank you!)

  42. I made this pie for Thanksgiving, and it was a HUGE hit! I modified it by using half gingersnaps and half graham crackers for the crust, and I added a drop of maple extract to the filling. But it was so phenomenal. I'm adding it to my Thanksgiving recipe box from now on!

  43. I made this pie tonight for dinner. I almost cried when I cut the pie, it went soft and didn't make the triangle shape like your picture. It turned out I didn't read the rest of the recipe "cool after 2 hours and fridge". Oh my!!! My husband ate half of the pie anyway because he said it was soooo good.   45. I made this tonight it was delicious. I substituted evaporated milk for half and half and made crust with baby crackers because that is what I had on hand at it was great. Definitely a keeper.

  50. Delicious pie! I made it for Christmas, but didn't have it in me to make the brown sugar whipped cream after all the big meal work I had done.   51. I was an adult before I learned to like pumpkin pie. My mom always made sweet potato pie. A few times at family get togethers, I accidentally got pumpkin and thought it was awful! I have now learned to enjoy pumpkin pie, but sweet potato pie will always be my favorite. I never got my mothers' recipe, but I am going to try this one. Looks perfect!
