{Um, how cool is that HAIR?!?}
Yellow roses were her favorite, so I thought I would make some to celebrate. And, unless she figures out a way to get back here, I guess I'm going to have to eat them, too.
These are vanilla-almond sugar cookies topped with a swirl of crusting buttercream and royal icing leaves. (Keep scrolling for the instructions to make them.)
Here are some things I remember about my mom:
- she always had a project...a quilt, sewing costumes, making Christmas ornaments,
- her love of all things Irish,
- she would reapply her mascara and lipstick just before my dad came home from work,
- our house was *always* clean,
- going to a school open house and watching her ever-so-politely put my bully of a band director in her place,
- she loved the Miss America pageant and watched it every year,
- every time we drove from Houston to Tulsa to visit my grandmother, she would sing "Oklahoma" as we crossed the Red River,
- her grammar lessons,
- she fiercely loved her family and friends,
- her lasagna, chicken & rice, cabbage rolls, spinach salad, mint chocolate ice cream pie, cinnamon rolls...and a million other meals.
- one batch of vanilla-almond sugar cookies (I used 3.5", 2.5" and 1.5" cutters)
- royal icing, tinted with AmeriColor Leaf Green
- disposable icing bags
- couplers and tips
- Amanda's perfect crusting buttercream, tinted with AmeriColor Egg Yellow
Bake and let the cookies cool completely.
Make Amanda's buttercream. I followed the recipe almost exactly, just changing up the extracts a bit to 1 & 1/2 teaspoons vanilla and 1/2 teaspoon almond extract. The rose cookie idea was inspired by Amanda as well. Y'all, she makes the prettiest sweets!

These are beautiful Bridget, just like your Mom. As I feel about my own mother, your Mom is always with you and she makes her appearance known in you, Kiddo and all her grandkids. When you see or hear things that remind you of her, that IS her.

I guess these are her "Yellow Roses of Texas". Isn't that what is suppose to be THE flower everyone loves in Texas? Your story about how your mom ALWAYS sang Oklahoma when crossing the river reminds me of something my mom ALWAYS does now. What's so funny about it is that when the older relatives did the same thing it used to drive her nuts. For my dad's entire childhood and much of my life whenever my dad's side of the family had a special meal or someone's "birthday" dinner it was ALWAYS the same meal. To this day this is still his favorite meal and asked for it just this past Father's Day. It's Fried chicken which was coated in flour and fried in a small amount of Crisco in a cast iron skillet, mashed potatoes, gravy, vegetables, etc. You get the idea. The sides may change but never the chicken, gravy or potatoes. It was the chicken that was most important. Now this was not the fried chicken so many think about, it doesn't have the crispy type skin of a that made in a deep fryer. If you've ever had anything made in a cast iron skillet you'll know what I mean. It has it's crispy parts but that's do to a lot of browning. This was always "par" cooked on Saturday as birthday dinners or other special meals were after church on Sunday. What the women would do is place the NUMEROUS pieces of partially cooked fried chicken in a roaster, add a small amount of water and place it in a low and slow oven where it gently "steamed" while everyone was at church. While we would be sitting there eating this delicious chicken dinner, sure as shootin'....one of the older relatives would ALWAYS tell the story of how "Grandpa Garnand" wished the women bad luck with their chicken when they prepared this meal. What he meant by that is he didn't want it ruined, he wanted it overdone so that the meat would fall off the bone. (I must admit it IS good this way). It got to the point that my parents, my brother and I would glance at each other and inwardly laugh because we each knew what the other was thinking.....here we go again! Now, EVERY time my mom or I prepares this meal (I've rather taken over most of the holiday and special dinners) she either tells the story the way the women or my great-grandfather told it or, she tells the story of how the relatives told the story. So......it still never ends. I'm back in the old family homeplace with much of the family furniture, dishes, etc. the way it was during both mine and my dad's childhood. Sometimes it's like going back in time. Anyway, we STILL get some sort of version of this everytime we have the chicken even after 50+ years even though it used to drive even her nuts. She's SO funny. She's never realized what she's still doing. And I bet every time you cross over the river into Oklahoma you or someone STILL starts to sing Oklahoma just like your mom did before you.

I lost my mother 25 years ago and it is all those small things that are so meaningful now. Your willingness to share something so personal in such a lovely way really touched my heart.

What I would do just to have him back for a little longer to talk with him and share some stories with him. My dad was gone 24 years on June 26th and I feel like he was just here yesterday. I'm so grateful that my mom is still around and well.
