Egg-Free White Chocolate Sprinkle Cookie Bars
We've made desserts without flour (cake and brownies); we've made bread without yeast. We've even made ganache with sour cream! Without a doubt, this stay-at-home/quarantine time has forced us all to be more creative in our kitchens!

Today, I bring you white chocolate sprinkle cookie bars made without eggs! And, if you don't have white chocolate chips or sprinkles, no problem! Use chocolate chips or butterscotch! You can even use toffee bits! This recipe works with what you have - or don't.

Egg-Free White Chocolate Sprinkle Cookie Bars
Simply pressed into a pan, the dough bakes into bars that are buttery and sweet. Cut into wedges or more traditional squares.

Before we get into the recipe, let's talk about giving back. One of the strange things about this virus is that it seems difficult to "be a helper" when we have to stay at home. When Hurrican Harvey hit a few years ago, there were so many opportunities to get out and help: cleaning flooded homes, sorting donated clothing, stocking cans and distributing food at the food bank, etc.

I'm so happy to partner with H-E-B and their #TexansHelpingTexans campaign to share ways to help or inspire other Texans during this time.



Here are a few ways our family is joining the movement (not surprisingly, most of them involve food):

  • Supporting our local food pantry...as you can imagine, the need is up, but donations are down. Our parish runs a large food pantry and is working to distribute food with limited volunteers. Non-perishable food can be dropped off at the parish (no contact drop-off just to the left of the main sanctuary doors) or donations made online.
  • Common Bond Bistro and Bakery in Houston is running a 10,000 baguette challenge. For just $3, you can donate a beautiful, fresh, bakery baguette to be distributed to those in need through the Houston Food Bank.
  • This one hit home for us. Mr. E's mom lives out-of-state and is homebound, so we've been ordering grocery delivery for her. I was thrilled to see that H-E-B is working with Favor to ensure seniors have access to low-cost home delivery during the COVID-19 outbreak. You can give to the Senior Support Fund here
  • To know Houston is to know Mattress Mack. Of course, he's once again rising to the occasion in this crisis. He's serving those in need and will accept non-perishable food and toiletries. More info here.
  • I've been an Astros fan since I was a little girl, and they're all giving back to the community in a big way. Alex Bregman's FEEDHOU campaign is just about the easiest way to give.   • As always, local Catholic Charities is providing food and emergency financial assistance to those affected by COVID-19.

  • After seeing so many beautiful chalk drawings and inspirational messages on our local trails, I decided to join in and "chalk" a few pared-down recipes. I'm hoping a few trail runners have stopped to snap a recipe pic. (And yeah, of course, I messed up my chalk at the top.)

On with the recipe!

You'll mix the ingredients, then add the white chocolate chips and sprinkles.


Press into a pan and bake until lightly golden and set. 

Egg-Free White Chocolate Sprinkle Cookie Bars

Let cool and cut into wedges or squares. I think the wedges are fun! 




Egg-Free White Chocolate Sprinkle Cookie Bars

3/4 cup unsalted butter, room temperature
1 cup sugar
1 teaspoon vanilla 
3/4 teaspoon fine sea salt
2 cups unbleached, all-purpose flour
1 tablespoon milk
1 cup white chocolate chips
1/3 cup multi-colored jimmies 

Line an 11x8" rimmed cookie sheet with parchment. Preheat oven to 350. 

Cream butter and sugar several minutes until fluffy. Mix in the vanilla and salt. In two additions, mix in the flour on low speed. Once combined, beat in milk. Fold in (or mix on low) the white chocolate chips and sprinkles. 

Press into the prepared pan and bake 30-40 minutes or until set and golden. Cool in the pan, then remove and cut into wedges.
