Whole-Wheat, Whole-Grain Morning Monster Cookies and an Invitation!

Last year if you would have told me that I'd write two blog posts on running, I would have laughed (and laughed, and laughed some more).

What I always said when people talked about running was that "running hurts me."  It was the truth, and also, remedied with a more substantial sports bra. *ahem*

You might have seen a post back in the spring about my first 5K.  Since then, I've kept up with the running...albeit a slight foot injury had me on the sidelines for a few weeks and this Houston humidity is surely trying to kill me.

What has kept me going is a group of girls called the Red Faced Runners.  Yep.  Here we are in our Wonder Woman socks...

We're all at different levels of running, but the common denominator, besides our red faces, is that we cheer each other on.  These girls are my heart when I feel like I don't want to get out there, or I want to quit and walk home. 

We also have a fearless leader, Cindy of Once Upon a Loaf.  Cindy is a real-live RUNNING COACH...and she's over at Dara's blog, giving some invaluable advice for starting a running program and training for a 5K.

First though, Cindy was nice enough to share a few quick points here:

1. Believe in the run.
2. Believe in the rest.
3. Respect must rule all.
4. Your body is your temple.
5. Your kitchen is your place of worship.
6. Equip yourself.
7. You run.  You don't jog.
8. Get after it.
9. Spread the love.
10. Have the time of your life!

Plus....you can eat all of the cookies you want after the race.  (I'm not sure that's in Cindy's training plan, but it's part of mine.)

OK...let me share with you part of my running routine.  I like to run early.  Why?

A. It's cooler outside.
B. It takes me approximately 4.5 hours to dry my hair, so early gets me out of the house by noon.

Before heading out, I like to grab a quick breakfast.  I don't want to cook anything, so most mornings, I grab a Kind Bar (thank you, Teresa), but having a breakfast cookie like this already made and ready to go is even better.

I call these "Morning" Monster Cookies because they're chock-full of oats, whole-wheat flour (KA White Whole Wheat), peanut butter, and dried cherries replace the typical M&Ms.  OK...there are chocolate and butterscotch chips, too.  Sugar = energy, right?  Right.

Morning Monster Cookies

1/2 cup (1 stick) salted butter
3 eggs
1 cup light brown sugar
1 cup granulated sugar
1 teaspoon vanilla
1 teaspoon light corn syrup
2 teaspoons baking soda
1 teaspoon kosher salt
1 & 1/2 cups chunky peanut butter
4 cups rolled oats
1 cup white whole wheat flour, King Arthur brand (all-purpose is fine)
3/4 cup semi-sweet chocolate chips
3/4 cup butterscotch chips
3/4 cup dried cherries

Melt the butter over low heat and set aside.  Line cookie sheets with parchment paper and preheat oven to 350.

In a large bowl, whisk together the eggs, sugars, vanilla, corn syrup, baking soda and salt.  Whisk in the melted butter.
Add the peanut butter, oats, and flour; stir until combined.  Stir in the chips and cherries until evenly distributed.  (This will give your arm a workout.)

Let the dough rest for 30 minutes.

Drop the dough by 1/4-cupfuls onto the parchment-lined sheets.  Flatten slightly with your fingers.  Bake for 12 minutes.  Let cool on the cookie sheet for 1-2 minutes, then cool completely on a cooling rack.

  4. What does the corn syrup do in the recipe? I'm thinking about skipping it.

    My sister-in-law has convinced me to start running with her and I DON'T LIKE IT (just need to make that clear) but it's a lot more interesting than watching Real Housewives while on the elliptical machine at the YMCA. Where do we sign up for our Wonder Woman socks?

    1. It will be just fine without. I think it helps with the soft/chewy texture, but it's only 1 teaspoon. Shouldn't make a huge difference. :)

  6. I understand about the humidity trying to kill you. I have the same issue here in Florida. I'll join your challenge. I started the year training for a 5k. I was doing really well until I got really sick. I'm thinking with summer holidays, I don't have the stress from work, I can do it.

  12. It must be fate Bridget.....I have been driving past a billboard for a race this coming September and heard a radio ad for said race on my drive to work this am. The first blog I check today (yours naturally) has a post about running?? Count me in and wish me luck....my motto has always been "the only time you should run is if a bear is chasing you" I expect the next couple of months there will be lots of tears and sweat and complaining!!

  26. To everyone who's looking for the motivation to run, I highly recommend the app 'Zombies, Run!'. It's hard to describe, other than it's a sort of radio play that plays out between songs on your playlist where zombies are chasing you, and also sometimes zombies actually chase you and you have to run away really fast or you get caught.

    I have tried to get into running off and on for years, but this is the first time I've stuck with it long enough to start seeing real improvement.

    They're coming out with a C25K expansion sometime this summer, and I can't wait.

    Doogan loves them too!
    I always carry KIND bars in my purse!
    Sometimes I only eat 1/2 {while on the go} which means the other 1/2 is wrapped up in my bag.
    Doogan always finds my purse...gets the KIND bar out...takes it out of the wrapper...and eats it!
    Yesterday I got a KIND bar out~unwrapped it~set it down and went upstairs for a minute.
    Upstairs I thought to myself...I bet Doogan gets that Kind bar off the counter and eats it!
    Just about that time he came flying up the stairs like he was so happy!
    He popped on the bed looking very satisfied.
    I looked at him and said "you ate that kind bar didn't you!"
    I gave him a little kiss to see if I smelled EVIDENCE of a Kind bar!
    He had eaten it!
    I thought man I hope he didn't eat the wrapper!
    Came downstairs and the wrapper was on the kitchen floor!

  35. i love monster cookies! i have a recipe very similar to these, but with raisins instead of chocolate! they are SO good -- i don't know about you, but a batch of these is gone in about 36 hours!

  37. Wow, you all look so great. I've recently started the "run your butt off" program. It is similar to the "couch to 5k" and gets you running for 30 minutes straight in 12 weeks. Since I am so overweight I'm running each week twice though. So far I'm doing great! I'm up to walk for 3 min. run for 3 min. Who would of ever thought! It feels great!

  39. Bridget, I wanted to thank you for posting about the "From the couch to 5k" app. For the first time in my life I'm actually exercising. I mean, I went to the gym for a month to loose weight but it never stuck. That is how I started running, to loose weight. But now, it is about the run. Just loosing myself in the experience and seeing how I'm slowly able to accomplish what I thought I wouldn't be able to do anymore. So, thank you so much.

  42. Love the wonder woman socks. Love this morning monster cookie recipe. My hair yakes forever to dry. I have two body size aquis towels that make a world of difference. Try it..do not confuse those towels w tirbie twist.. turbies do not work for me.

  45. Love, LOVE the Wonder Woman theme! I have an AWESOME group of 5 ladies who just completed the Spartan Sprint here in WA in June. We too where the Wonder Women of the day. While everyone else wore black we stood out & had so much fun while getting ourselves into amazing shape!
