My son & I spent most of yesterday baking. Here's part 1 of our shipment:
Gingerbread Biscotti...
The recipe is actually on the King Arthur website. It seems daunting with 2 baking times, but really takes less time than rolling dough and decorating cookies. :)
My kitchen...house, actually...smelled like Christmas while these were baking. Absolute heaven!
Of course, taste testing is essential! ;) These were perfect with a cup of chai tea! See those vanilla beans in there? I used vanilla bean paste
in place of the vanilla extract.
I've posted this recipe before for 1-2-3-4 Peanut Butter Cookies. They are delicious and from the same cookbook.
Stay tuned for part 2 of our shipment. Godspeed to our soldier...and we are thankful to all our service men and women and their families for their enormous sacrifice!

OK--these look fabulous and I will be making them for gifts this year! I'm sure everyone on the ship will love them! Thanks for participating on my team! Can't wait to see what else you post about!

ReplyDeleteYum the smell of Christmas!! I bet they will be sooo happy!!
ReplyDeleteThey will love these!
ReplyDeleteOOOh gingerbread biscotti! I have the King Arthur book and haven't yet used it. Might just pull it off the shelf and make some of those.
ReplyDeleteThat is awesome that you are participating. I have for the past couple of months but after the switch in websites I never got back over to pick a soldier. (there wasn't much info on there yet) I'm sorry I missed this month's.
ReplyDeleteAs usual your cookies look wonderful. Thanks for the info on the cookbook, I have it but have yet to make anything out of it!

Hello! I just saw you featured over at Home With Mandy's blog. These look fantastic! I've never heard of vanilla bean paste, what an awesome idea for a product! I might have to go over to Amazon and get some so I can try this biscotti myself! Is the measurement equivalent for extract vs. paste?
ReplyDeleteHey Heather! It is a really neat product...like a thick extract filled with tiny vanilla bean flecks. The measurement is the same and on the bottle they give the measurement to use when replacing a vanilla bean. I'm looking forward to using it some more.
ReplyDeleteIt looks like there's some problems with the site, but I registered and will keep trying to join the next round. What a great idea!! Thank you.
