Greatest Hits . . . Works For Me Wednesday

This week's Works For Me Wednesday is at themed edition and the theme is "Greatest Hits."

So, from the archives and my very first WFMW post:

"Helping cookies keep their shape..."

To help cookies keep their shape, freeze them! I freeze each batch of cut-out cookies for 5 to 10 minutes before baking. They rise just slightly higher and keep their shape better. This really helps when using an intricate cookie cutter, but I do this even when baking circles.

If I'm baking a large batch of cookies, I normally have four cookie sheets rotating:
  1. one sheet in the oven,
  2. one in the freezer,
  3. one on the counter for loading,
  4. one cooling off from the oven.

  5. Great, simple, easy tip to share... I always make mine super chilled, too, but I'm going to clear out a space in the freezer next time to try this out!

  6. Thank you for that info. First time I have heard that. I avoid using some of my cookie cutters at Xmas because the cookies spread. Now I will go back to using them all.

  9. I always forget this tip.....and I'm baking cookies today, so I'm going to give it a try!!

  10. This really works.

    Also, because I'm really inept at rolling, cutting, and transferring to the cookie sheet, I roll my dough on waxed paper or a silicone mat, and freeze it before I cut the cookies out. Then the cookies are easy to pick up and move to the cookie sheet and they don't get stretched or distorted.

    I stayed on this blog for days!
    I finally popped back into reality when I decided to make those PINK cookies for BAMA tailgating! I remember emailing you...
    stressed that the icing was PINK...
    and not RED!
    I remember you saying...
    "well if I know those Alabama fans...
    when they see PINK....they are going to THINK RED!!!"
    You emailed me back...and you didn't even know me! I love you for that Bridget!

  22. That's a great tip! I usually refrigerate the dough before rolling, which also helps... But, I have been known to pop the sheets into the freezer, too (if they fit... LOL!)
