Now, my sister, on the other hand, is a true peanut butter lover. She used to eat peanut butter on pancakes and peanut butter & pickle sandwiches (yep...it's true), so I thought she'd like these Peanut Butter Chocolate Chip Bars.
{And, it's a good idea to get them out of the house. I "tested" one and almost inhaled the entire pan.}
Peanut Butter Chocolate Chip Bars
{adapted from Peanut Butter Smoothies from The King Arthur Flour's Cookie Companion}
6 TBSP unsalted butter
1/2 c natural chunky peanut butter (I use Skippy Natural)
1 c sugar
1/4 c light brown sugar, packed
2 eggs
1 tsp vanilla
1 c flour
1/4 tsp coarse salt
1 tsp baking powder
1 c chocolate chips (semi-sweet)
Preheat oven to 350. Lightly grease an 8 x 8" pan
Whisk together the flour, salt and baking powder. Set aside.
Cream the butter and peanut butter together until smooth. Beat in the sugars until combined.
Add the eggs, one at a time, scraping down the bowl after each addition. Stir in the vanilla.
Stir in the flour mixture. Add the chocolate chips, stirring until combined.
Spread the batter into the prepared pan (you WILL want to lick the spoon...it's yummy!). Bake for about 30- 32 minutes. Cool completely before cutting.

ReplyDeleteI SO understand! That's why when I made some PB/Choc. Chip Cookies on Monday, I filled two pans, then rolled the rest up in wax paper, put them in a big ziplock and froze them. I already made one of the rolls for our game night.
ReplyDeleteIf your sister really likes PB on things, she should try it on French Toast with Syrup and Powdered Sugar. It's so good.
(And while I'm making too long of a comment, French Toast is easy to make in the waffle maker and then you have holes to pour the syrup into. My mom calls them Fraffles.)
I LOVE peanut butter and pickle sandwiches! When I was young, it was not uncommon for us to add a slice of cheese also. Somehow, the sandwich sounded healthier than chocolate chip cookies. These bars looks wonderful and since I'm having people over this weekend......:-)

ReplyDeleteI live in Denver - I had to bake these for 5 minutes longer, insides still gooey; outsides semi-hard. Made them again, halved the flour, added a touch of extra peanut butter, baked them for 32 minutes and they were perfect! Altitude screws with everything.

I made these last week for my parent's hard working farm hired men. They were gobbled up almost instantly! The only complaint - I didn't cut them big enough! I'll be making these again soon!!

ReplyDeleteOnly mistake - I only had salted butter, and thought it might mess up the baking chemistry... It did.
I reduced the salt to 1/8tsp and it was still too much - it rose very high and fell a bit. It turned out more like a cake than a bar, but they were still amazingly delicious!
I highly recommend trying these!

ReplyDeleteThese bars taste fantastic, but has anyone had trouble with them not baking through completely? I followed the recipe perfectly but even after baking the bars for an extra 5 minutes they were still raw on the bottom. I will definitely make these again and hope they cook properly.
ReplyDeleteI had the worst time baking these! I am an avid baker and rarely have issues, but I had to bake this 15 min longer than the recipe said, while the sides ended up burning. Then when they were finally done, my hubby and I both thought it didn't taste good :(....I am guessing I did something wrong, but not sure what!

ReplyDeleteThese are baking in my oven right now! I ran out of brown sugar, so I added honey and also ran out of chocolate chips, so I cut up a dark chocolate bar in my pantry! The batter was delicious and I can't wait to taste the finished product!

I have made these twice and while they taste lovely, I have to bake them 10 to 12 minutes longer than the longest listed time to get the center to set (tester stick to come out clean) but when I do that the edges burn....not get crispy, BURN. I can only salvage the middles. My oven is only a year old and is a super deluxe Electrolux so I doubt it's my oven. Any hints??? Thank you!!

ReplyDeleteI made these this weekend and they were delicious! The whole family loved them. I doubled the recipe and used a 9x13 pan. I had to bake them about 10 minutes longer than the original recipe called for using the larger pan. Great recipe. Did the recipe in the book happen to list the gram or ounce measurements for the flour, sugar, etc?
