I knew exactly what to make him for his birthday cake, Cheryl's Chocolate Chip Cookie Dough Cupcakes.
Let me break these bad boys down for you....
First, there is a chocolate chip cookie cupcake. Then, they are filled with chocolate chip cookie dough filling. And finally, they are topped with a brown sugar cookie dough frosting.
{Yeah, you don't WANT to know the WW points on these puppies.}
For the cupcakes and the filling, I'm going to link you to Cheryl's recipe. The only change I made on those was to add just a *pinch* of salt to the filling. You could totally skip that if you wanted.
Would it be too much to serve these with Cookie Dough Ice Cream? Hmmm. These are the tough questions.
I changed up the frosting from the original just a bit, so here is that recipe...
Brown Sugar Cookie Dough Frosting
3 sticks unsalted butter, room temp.
3/4 c. light brown sugar, packed
1 lb. box powdered sugar
1/2 tsp. coarse salt
3 TBSP milk
2 and &1/2 tsp vanilla
mini chocolate chips
Cream the butter and brown sugar with the paddle attachment until fluffy. Add in the powdered sugar and beat on low until incorporated, then increase the speed and beat until smooth and combined. Add the salt, milk and vanilla; blend until smooth.

And I have NO IDEA how this happened, but the reflection of the flames made ♥'s in the picture. Is that cool, or what?!?!?

I did a similar frosting recipe - the brown sugar flavor is key. I used molasses to get it, but it's the same concept. The salt is yet another important ingredient. Nice work.

ReplyDeleteOh and if you want to know, those candle reflections are caused by the filter you must be using on your DSLR. I have the same thing happen in this type of photography situation. In this case it looks cool, but sometimes the reflection ends up on the subjects face and ruins the picture. If you want to avoid it, just remove the filter from your lens in those situations.

DeleteSomething is wrong with my frosting. It is granular from the brown sugar. How did everyone else who made these get away with the icing not being granular?????
ReplyDeleteMy frosting was granular, too. And incredibly thin. I put more powdered sugar in, but it never got thick enough. Very, very rich recipe, but yummy, too! I'll have to find a recipe with less sugar for my son's birthday party, though.....I can't imagine feeding this to lots of 4 year olds...lol!
