It's all E.T.'s fault that we haven't been eating these Peanut Butter M&M cookies for years.
E.T. came out when I was almost 13...a prime candy-eating age. In case you've forgotten, Reese's Pieces were heavily featured in the movie. Of course, like the rest of America, I had to have them.
I loved Reese's Peanut Butter Cups, but the Pieces, not so much.
So, when Peanut Butter M&M's came on the scene, I passed them right over. I just knew I wouldn't like them.
Then, I tried them about two years ago, and WOW...they are now a staple in my (balanced *ahem*) diet.
Guys, these are the puffiest, fluffiest, YUMMIEST peanut butter cookies you'll ever eat. As in, make them ASAP. As in, you won't care if your jeans feel a little tighter after eating them. As in, DO IT.
Puffy, Fluffy Peanut Butter M&M Cookies
{makes 22 cookies}2 cups unbleached, all-purpose flour
2 teaspoons cornstarch
1 teaspoon baking soda
1/2 cup butter
1 & 1/2 cups dark brown sugar
3/4 cup smooth peanut butter (not all-natural)
1 egg
2 teaspoons vanilla
1 teaspoon corn syrup
1 (11 ounce) bag peanut butter M&Ms, divided
Preheat oven to 325. Line 2 cookie sheets with parchment paper.
In a medium bowl, whisk together the flour, cornstarch, and baking soda. Set aside.
With an electric mixer, cream together the butter and brown sugar until light and fluffy. Beat in the peanut butter until combined.
Add the egg, vanilla, and corn syrup, beating until mixed well, scraping down the bottom and sides of the bowl as needed.
In two additions, beat in the flour mixture on low speed. Mix just until combined. Reserve 1/4 cup M&Ms, folding the remainder into the batter.
Scoop the dough onto the prepared sheets using a 2 tablespoon cookie scoop. Press 1 or 2 of the reserved M&Ms onto the top of each cookie.
Bake for 13 minutes. (The cookies will not spread.) Cool on the cookie sheet for 1-2 minutes, then transfer to a wire rack to cool completely.
Am I alone in my thoughts about Reese's Pieces? Should I give them another chance? It has been about 30 years since I last tried them. ;)

ReplyDeleteI'm not just flattering you when I say that I am making these today. Like stopping everything and making them right now. I LOVE peanut butter cookies, but looooathe the crunchy ones. ;) And I'm with you on the Reese's Pieces, except every few years when I'm in the theater and I buy a box, feel "meh" about them, but eat the whole thing anyway. Now you know. :)

ReplyDeleteAnd agree with both your stance on Reese's Pieces and peanut butter M&Ms. The Pieces are just too sweet, and you can't taste the peanut butter after a few of them. The peanut butter M&Ms got it right with their less sweetened pb.
Agreed that peanut butter m&m's are way better than reese's. I'm going to save this as a birthday treat though as I've started my new year's diet. Looks so good though!
ReplyDeleteI love reese's pieces AND PB M&Ms. But, they are in no way comparable. If you are looking for that pb flavor the m&ms are the way to go. The pieces are just very sweet with maybe a hint of pb. I'd give them another try, but probably wouldn't have high hopes.

ReplyDeleteThe only way I've ever enjoyed Reese's Pieces is in a Blizzard. I think the coldness of the ice cream deadens my taste buds to the sweetness of the pb. I tried them once on their own and I agree.... Not a go-to candy for me at all. I'll definitely have to give the M&M a try. And these cookies do look yummy. May need to make these too. Thanks for sharing.
ReplyDeleteOkay, these are next on my "must bake" list. I like Reese's Pieces AND pb M&M's. Very different, so I guess it just depends on my mood! To me, just no such thing as "bad" peanut butter flavor, just some better than others!!!

I think I'm going to whip up a batch of these cookies today... I love that you don't have to chill them before baking. Can't wait to eat them!

Do plan to try these, mix dark chocolate and pb m&ms... Did you know that when they were making E.T., they asked to use M&Ms, but the company said no, so Reeses created peanut butter Reeses pieces? Thought that was interesting... Cookies, here i come!

I just saw these on Pinterest and since I have an excess of peanut butter and M&Ms (just plain not the PB kind) left over from Christmas I knew I had to make these. Oh. My. God. I love peanut butter, but have never been a big fan of the texture of a traditional peanut butter cookie. Yours are absolutely unbelievable! They're by far the best tasting peanut butter cookie I've had.... like peanut butter pillows that just melt in your mouth. This is going to be the only peanut butter cookie recipe I use from this day forward. My family and I thank you so much!

ReplyDeleteReally excellent! I tried the recipe with Trader Joe's natural peanut butter and they still came out delicious. The dough was slightly dry and crumbly but I made two pans without an issue and for the last remaining few I added a tablespoon or two of canola oil to hold the remaining dough together. I also subbed in leftover reeses pieces from halloween and chocolate chips. Super delicious.
