Desserts for Dudes month continues....
with a giveaway!

It seems as far as cakes go, German Chocolate is a man's best friend. I don't know if it's the coconut, the pecans or that caramel-y frosting, but these definitely will win your guy's heart!
First, let me tell you about Laurel...maker of the cupcake toppers and more, like these:

OK....so that didn't happen, but during the wait (and wait and wait) to get my book signed, I really *did* meet some other fabulous women. Joann, Kimberly and Laurel (just to name a few)....Laurel, of Go Against the Grain on etsy. Laurel does really cute custom graphics and, it just so happens, cupcake wrappers and toppers.

On to the cupcakes......this recipe is from Ina. Every one of her recipes that I've tried has been delicious. This one included. Oh, and the batter....I will make this again JUST TO EAT THE BATTER. We're lucky there *were* any cupcakes.
German Chocolate Cupcakes
{adapted from Ina Garten in House Beautiful}
1 & 3/4 c. flour
1 c. natural cocoa powder
1 & 1/2 tsp. baking soda
1/2 tsp. coarse salt
1 & 1/2 sticks unsalted butter
2/3 c. sugar
2/3 c. light brown sugar, packed
2 eggs, room temperature
2 tsp. vanilla
1 c. buttermilk, room temperature
1/2 c. sour cream, room temperature
2 TBSP freshly brewed coffee, cooled
Preheat oven to 350. Line cupcake pans with 15 liners.


{heart-shaped measuring cups are a *must* for brown sugar!}
With the paddle attachment, cream the butter and the sugars on med-high speed for about 5 minutes, until light and fluffy. Lower the speed to medium and add in the eggs one at a time, scraping the bowl as needed. Beat in the vanilla.
Divide the batter into the cupcake tins. (Remember to test it....you may get only 14 of those cupcakes after all.) Bake on the middle rack for 20-25 minutes or until a toothpick comes out clean. Cool in the pans for 10 minutes, then remove and cool completely before frosting.

German Chocolate Frosting
1 & 1/2 sticks unsalted butter
1 (12 ounce) can evaporated milk
1 & 1/4 c. sugar
5 egg yolks, lightly beaten
1 tsp. almond extract
1 tsp. vanilla extract
1/2 tsp. coarse salt
2 c. sweetened flaked coconut
1 c. blanched, sliced almonds, toasted
1 c. chopped pecans
Melt the butter in a large saucepan over medium heat. Stir in the milk, sugar, egg yolks, extracts and salt with a wooden spoon. Bring the mixture to a simmer over medium heat, stirring constantly. Reduce heat to low, stir and simmer 5 minutes until thickened. Mixture should coat the back of the spoon.
Strain the mixture using a fine sieve into a heatproof bowl. Stir in the coconut, pecans and almonds. Allow to cool at least one hour before using. Frost cupcakes with an off set spatula or butter knife.

ReplyDeleteThe right cupcake can be eaten without icing. But in my opinion the icing should compliment the cake. Just like the recipe you posted. The cupcake would be german chocolate without the icing. Beside, getting the little bit of icing on the tip of you nose is part of the fun. ;)

I have to say it's all about the frosting, but the cake has to make a good pair for it too. If the flavors don't go well then even the frosting won't be enough to make it worth eating.
ReplyDeleteIt takes both. A nasty flavor or texture to the frosting will ruin the whole thing. Or a cake that is dry, crumbly or lumpy (the wrong sorta lumpy, not the chocolate chunk, awesome filling lumps kind) will make me wish the frosting was on a spoon instead of on the cupcake! But a moist, tasting cake and a decadant frosting equals heaven.

ReplyDeleteI have to say, I'm a frosting girl. Cream cheese being my number one favorite. But if the cupcake is stuffed with a really awesome filling. Then I'm all about the cupcake. So it's really an "it depends" kind of situation.
This is a tough one. If it's great cake it doesn't need frosting. A good frosting can stand on its own. Perfection is when they bring each other to a higher level not achievable separately.

ReplyDeleteOh, it's all about the cake!!! The great thing about cupcakes is that it's easy to convince yourself that you aren't eating too much. It's so easy to "forget" that you've already had three cupcakes when you reach for that fourth one; but it sure isn't so easy to "forget" when you go to cut your fourth piece and there is already a HUGE chunk of cake missing from the pan. It's even worse when you've made a double layer cake and it looks like a pie graph, which makes it easier to say "Oh my goodness. I can't believe that I've eaten 40% of the cake that I baked less than 24 hour ago!"

German Chocolate Cake reminds me so much of my Mamaw...she always had one from the grocery store.

I cannot do one without the other, it goes hand in hand, I won't eat a cupcake without frosting, it is like eating a muffin. Feel so naked without the frosting. With just the frosting, no way! No frosting shots for me.

We didn't have cupcakes where I live(iceland) so it was only a few years ago that through the internet I realized these delicate frosted delights! The frosting is just a extra delight to sooth my inner sugarmonster! The cake is nr.1 in my eyes but its partner in crime is the frosting. Together they wreck havoc on my tastebuds! :D

I think that usually, I use the cupcake to get to the icing. But I've had a cupcake that had a hershey's kiss baked inside it, and the whole thing was awesome. These German chocolate cupcakes look amazing!

ReplyDeleteMy favorite cupcakes are the ones that marry a great cake with a perfectly matched frosting. If you take a big bite, everything should work together and be yummy. That said, I can eat an unfrosted cupcake...I'm not sure I'd be able to eat just the frosting.
ReplyDeleteI personally believe it is the vehicle for the frosting. When you make a cupcake, the frosting options are endless and the attempt to have the right porportion of frosting to cake is key.

ReplyDeleteThe cupcake is all about BOTH the cake and the frosting. A plain cupcake? Ehh...I'd pass that up. A container of frosting? Maybe after a bad day or a boy-break up. But creamy, sweet frosting smeared on a mini, moist cake?! I could never say no! Yumm!

It's all about the cake, and I don't even really love cake, but that's what makes the cupcake perfect..pre-portioned. :) But good cake can't work without perfect frosting, but good frosting is way easier to make than good cake!
ReplyDeleteHmmmn, tough choice. I'll have to say the cake. My daughter would say the frosting though! Also, loved it when that "blogger" came to my city and I waited and waited for my book to be signed.
ReplyDeleteMy husband's fave cake is German Chocolate (surprise, surprise!). Almost every year of our marriage I've made him a cake for his birthday. I'm usually all about the frosting but with the "frosting" used as a filling in this recipe, the cupcakes need no other adornment. They are yummy right out of the pan!

I usually scrape almost all the icing off cupcakes and just eat the cake. (I married the perfect man. I eat the cupcake and he eats his cupcake with my AND his icing!) But its the icing that makes cupcakes LOOK soooooo CUTE! I could never make cupcakes without icing them though, because it is way too much fun to decorate them. (I consider this "Art Therapy!)lol Also, I prefer cupcakes to cake anytime, no matter what the flavor.

ReplyDeleteIt's all about both. The frosting and cupcake ration has to be right. Not enough frosting and it's never good. Too much frosting and that's not good either. The perfect match would be just the cupcake top and frosting. That would be pure heaven =o)

ReplyDeleteFor me it's a combo of both. I usually break off the bottom and eat if first and then eat the top with the frosting for a perfect ratio of cake:frosting. Sometimes I do the sandwiching trick.

cake is useless to me if the option of eating the frosting straight-out exists. in the case of coconut-pecan frosting, i'll eat it straight-out even if it's wildly inappropriate. :)
